Brazilian Moqueca Capixaba

 

The moqueca capixaba is, along with moqueca bahiana, the most popular version of moqueca. A moqueca is a seafood stew traditional of Brazil. The moqueca capixaba is traditional in the southeastern region of the country, especially from the state of Espirito Santo.

Recipe of Moqueca Capixaba:

Ingredients

1 kg boneless fish
5 medium sized tomatoes cut in slices
2 garlic cloves chopped
2 big onions
½ cup vegetable oil
1 teaspoon lemon juice
Cilantro
Salt
Pepper

Preparation:

Clean the fish, dry it with a clean towel and season it with the lemon, salt and pepper.

Peel the tomatoes, chop them and salt them. Chop the onions as well.

Pour the oil in a pan and fry the onion and garlic Then add a layer of tomato (use half of it) and cilantro, the fish above, and the remaining tomatoes with some more cilantro covering it.

Cover the pan and cook in medium heat for about 20 minutes.
